The Chinese name of the dish is very funny. It is called "Number Ribs" Actually it is a sweet & sour braised spare ribs dish. Because the way to memorize of the seasoning quantity are based on counting from 1 to 5, so people simply called it "Number Ribs"

- 400 g Spare Ribs 排骨
- 1 tbsp Cooking Wine 米酒
- 2 tbsp Black Vinegar 鎮江醋
- 3 tbsp Sugar 庶糖
- 4 tbsp Soya Sauce 生抽 及 老抽 (各 2 tbsp)
- 5 tbsp Water 水 5tbsp
To Blanche the ribs with water. Rinse well. 排骨汆水,備用
Mix all the seasoning. 將所有調味料混和
Add oil to the saucepan and fry the ribs until golden brown. 用少許油,將排骨稍為煎封
Pour the sauce and cook until the sauce reduces and glaze on top. 加入調味醬汁,以中慢火煮至排骨腍身及汁液收乾
