How I manage to cook 3 courses meal for dinner everyday? I am not a full time housewife (haha), so time management is really important to me. I always making a simple & quick side dish or salad like this one, to go with my main course, so it can save me a lot of time. This creamy potato salad can be served warm or cold. Up to you and of course your 2nd half or your family ^^ For this recipe, I use Ninja Pressure cooker to save cooking time and also saving energy and my electricity bill here in Scotland :P

- 1 pack Baby Potatoes
- 1 pack Creme Fraiche
- 3 tbsp Mayonnaise
- a few Priprika
- a few Cayenne Pepper
- season to taste Salt & Pepper
- 3 tbsp Chopped Parsley
- 2-3 tsp Lemon Juice
Cook the baby potatoes with pressure cooker (instruction please prefer to your cooker's user manual)
Mix all the dressing ingredients.
Add the chopped parsley.
Mash the baby potatoes while still hot, then mix with the dressing.
Serve warm right away or chill in the fridge for 4 hours before serving.
