
Sweet & Sour Ribs 數字骨
The Chinese name of the dish is very funny. It is called "Number Ribs" Actually it is a sweet & sour braised spare ribs dish. Because the way to memorize of the seasoning quantity are based on counting from 1 to 5, so people simply called it "Number Ribs"
Ingredients
- 400 g Spare Ribs 排骨
- 1 tbsp Cooking Wine 米酒
- 2 tbsp Black Vinegar 鎮江醋
- 3 tbsp Sugar 庶糖
- 4 tbsp Soya Sauce 生抽 及 老抽 (各 2 tbsp)
- 5 tbsp Water 水 5tbsp
Instructions
- To Blanche the ribs with water. Rinse well. 排骨汆水,備用
- Mix all the seasoning. 將所有調味料混和
- Add oil to the saucepan and fry the ribs until golden brown. 用少許油,將排骨稍為煎封
- Pour the sauce and cook until the sauce reduces and glaze on top. 加入調味醬汁,以中慢火煮至排骨腍身及汁液收乾
