Rice Noodle Rolls "Chu Cheung Fun" 港式小食 - 豬腸粉

Rice noodle rolls (we called it "Chu Cheung Fun" 豬腸粉) They are plain steamed rice rolls served with hoisin sauce, sesame dressing, sweet soy sauce, and roasted sesame. It is our childhood memories and yummy street food. We either had it as breakfast before the school bell rang or held the bamboo skewers with a stack of Cheung funs on our way home. They might have it but not plain flavor in Chinese dim sum restaurants. They will make dried shrimp with scallions rolls, then pan-fried until crispy outside. But for me, I would always vote for the humble plain version 豬腸粉😍
"豬腸粉" 陪伴了不少香港人成長的街頭小食。 它是以純米漿蒸製,再卷成豬腸狀,加上幾種醬料及芝麻,讓人回味無窮。 特別是趕上學或上班前的快捷早餐,抑或放學或放工回家前的小點心。 在外國的中式酒樓,比較常見是蝦腸或叉燒腸那種薄薄的廣式腸粉,而豬腸粉會製作成蝦米腸,再用油煎香。 如果想懷念一下童年味道 - 多醬腸粉,便要親手製作了。

Ingredients
  

  • 65 g Rice Flour 粘米粉
  • 15 g Wheat Starch 澄麵
  • 5 g Tapioca Starch 木薯粉
  • 240 ml Water 水
  • 1 tbsp Oil 油

For the Sauces 醬汁

  • 2 tbsp Hoisin Sauce 海鮮醬

To make seasoned soy sauce

  • 1 tbsp Dark Soy Sauce 老抽
  • 1 tbsp Light Soy Sauce 生抽
  • 1 tsp Sugar 糖
  • 2 tsp Hot water 熱水

To make sesame dressing

  • 2 tbsp smooth peanut butter 花生醬
  • 3 tbsp hot water 熱水
  • 2 tsp sesame oil 芝麻油
  • 1 drop Balsamic Vinegar 黑醋

Instructions
 

  • Mix all the flour into a large bowl. 將粉類置於大碗中。
  • Add half of the water and stir well 加入約一半水份,拌成粉漿
  • Then add oil to the flour mixture and stir to combine 注份油份,充份拌勻
  • Pour the rest of the water, leave aside 約餘下的水份倒入粉漿中,調較成稀釋粉液

To prepare the sauce 預備醬汁

  • mix all the ingredients and stir well. leave aside 將材料拌勻,靜置備用
  • Get the steamer ready. Brush the plate with oil and steam until hot. 預備蒸鍋,蒸盤上掃油
  • Pour in a thin layer, just cover the plate, then steam until bubbling on the rice roll. 倒入粉液,薄薄一層以看不見盤底為佳。 上蓋,蒸至粉液變熟形成氣泡
  • Remove the plate from the heat, leave to cool a bit before starting rolling the rice noodle roll. 取出蒸盤,稍微冷卻後,用刮刀卷成豬腸粉
  • Put the rice noodle rolls onto a plate. Drizzle with seasoned soy sauce, hoisin sauce & sesame dressing. Top with roasted sesame. Serve hot. 將製作好的豬腸粉置於碟中,加入醬汁及撒上芝麻。趁熱享用。
