
Thai Grilled Steak Salad (Neua Yang Nam Tok) 泰式牛扒沙律
Thai Grilled Steak Salad also called "Neua Yang Nam Tok" Neua is beef, Yang is a grill, and "Nam Tok" is the dish name which is originated in Laos and Issan (Northeastern Thailand), it means waterfall to describe the sound of grilling steak or meat. Although it's called Salad, it is made entirely of meat usually adding lots of fresh herbs, shallots, and roasted ground rice for crunchy texture.
Ingredients
- 400 g Wagyu Beef 牛扒
To Marinate 醃料
- 2 tbsp Oyster Sauce 蠔油
- 1 tbsp Soy Sauce 豉油
- 2 tsp Caster Sugar 糖
- 2 tsp Black Pepper 胡椒
- 2 tsp Corn Starch 粟粉
- 1/2 no. Lemon Juice 檸檬汁
- 1 tbsp Vegetable Oil 菜油
Nam Tok Sauce 醬汁
- 1/2 no. Onion 洋蔥
- 2 sprigs fresh mint leaves 薄荷葉
- 2 sprigs parsley 芫茜葉
- 1-2 no. Lemon Juice 檸檬汁
- 1 no. red chili 紅辣椒
- 2 tbsp Sugar 砂糖
- 2 tbsp Soy Sauce 豉油
- 1 tbsp Oyster Sauce 蠔油
- 1 tbsp Fish Sauce 魚露
- 1 no. Lemon Juice 檸檬汁
- 1 tbsp chili flake 辣椒粉
- 3 tbsp roasted ground rice 炒米碎
Instructions
- To marinate the beef steak & sit for 20 mins
- Then put into an airfryer at 200c for 5 mins
- Finely chop the onion, mint & parsley
- slice the red chili
- Add sugar, soy sauce, fish sauce & oyster sauce to a large bowl
- Add the chopped ingredients & chili in, then the lemon juice
- Add chili flakes
- Slice the cooked steak into pieces
- Mix with the sauce, then add the roasted ground rice and mix well.
- Serve well with sticky rice

Notes
- Use a hot griddle pan or hot pan for thick steak
- As the wagyu steak cut is thin, so I simply use an air fryer to cook
- For the cooked steak, leave to set for 3-5 mins before cutting to prevent loss of meat juice
- This is a traditional Lao cuisine, people usually serve it with sticky rice as the main course.
